Gluten, egg & dairy free sweet potato pancakes

For families with members suffering from food sensitivities feeding/eating is a challenge and more so if they suffer from more than 1, here is a yummy recipe courtesy of our friends at  Cecilia’s bake shop.   We love the fact that in this recipe sweet potato is used   to increase the fiber content and chai flour for some natural omega 3. This is one recipe you and your family are going to really love, it is very easy to make and taste  Yummy.

1-      Cup all-purpose gluten-free flour

¼ – Cup yummy spoonfuls sweet potato  

1-      Cup water

1-      Tbsp. coconut flour

2-   Tbsp. chia flour

½ – tsp. baking soda

2-   tsp. lemon juice

1-   tsp. baking powder

1-   tsp. vanilla

½ – tsp. pumpkin pie spice

1 – Tbsp. maple syrup

2 – Tbsp. olive oil

In large mixing bowl combine flour, coconut flour, baking powder, baking soda, chia flour stir to combine ingredients. if you are making your sweet potato  mash  until free of lumps or use Yummy spoonfuls creamy yummy sweet potato , add vanilla, maple syrup and pumpkin pie spice.  In medium size skillet warm 2 tbsp of oil and butter pour melted butter into pancake mix, add water, lemon juice, mix slightly to combine.  Drop batter onto hot greased griddle and cook until top is full of tiny bubbles, when underside is brown turn pancake over to brown on other side.  Enjoy with organic maple syrup.
