Sweet potato pancakes

Our friends at Cecilia’s bake shop gave us a fantastic gluten, egg and dairy free sweet potato pancake recipe. Here is another version of it for thoes who don’t have the above mentioned sensitivites.  We used bob’s organic white whole wheat flour. This took no time at all to make, both Georges & Jared-Zane couldn’t get enough of it,  

1-      Cup Bob’s white whole wheat flour
¼ – Cup yummy spoonfuls sweet potato
1-      Cup  milk
½ – tsp. baking soda
1-   tsp. baking powder
1-   tsp. vanilla
½ – tsp. pumpkin pie spice or cinnamon or nutmeg
1 – Tbsp. maple syrup
2 – Tbsp. olive oil, add a pat of butter optional
 1 egg

Yummy Spoonfuls organic sweet potato pancakes

In large mixing bowl combine flour, baking powder, baking soda, stir to combine ingredients.  Mash sweet potato until free of lumps if making from scratch or use Yummy Spoonfuls pureed sweet potato, add vanilla, maple syrup and pumpkin pie spice.  In medium size skillet warm 2 tbsp of oil and butter, pour melted butter into pancake mix, add milk, egg, mix slightly to combine.  Drop batter onto hot greased griddle and cook until top is full of tiny bubbles, when underside is brown turn pancake over to brown on other side.  Enjoy with organic maple syrup and a bowl of fruits
