Yummy butternut squash pancakes for the whole family. less than 10 minutes to make

My boys ( son and husband) just can’t get enough of this hearty breakfast

Organic Butternut Squash pancakes

1-     Cup Bob’s white whole wheat flour
¼ – Cup yummy spoonfuls butternut squash
1-      Cup  milk (we use almond)
½ -tsp baking powder
Pinch of sea salt
1-   tsp. vanilla or nutmeg
2  eggs

In large mixing bowl combine flour, baking powder, nutmeg and sea salt, stir to combine ingredients.  Mash butternut squash until free of lumps if making from scratch or use Yummy Spoonfuls creamy yummy organic butternut squash.  In another bowl combine wet ingredients, egg, milk and vanilla, whip together and pour over dry ingredients and gently mix to properly combine. Over mixing makes it chewy.

Drop batter onto hot greased griddle and cook until top is full of tiny bubbles, when underside is brown turn pancake over to brown on other side.  Enjoy with organic maple syrup and a bowl of fruits.
