Lunch is serve- Steam sweet plantains with bok choy and wild Atlantic Mackerel

Vegetable is always in abundance in our home just like grains; we eat a salad everyday regardless if the main dish is a veggie dish. It is our home tradition to eat something raw with each meal and my son loves his raw veggies with a passion from raw spinach to okra and everything in-between.

My week days are extremely busy so I turn to make food that takes little or no time.

Today’s lunch is Steam sweet plantains, sautéed baby bok choy, mixed salad and wild caught Atlantic mackerel, for dessert we are having pineapple- I love our farmers market.

 

 

 

 

 

 

 

 

 

 

 

 

 

Boy choy  is sautéed in olive oil with onion and see salt
Sweet plantains steam with a bit of water like you would potato or squash, you can bake it as well.
Mackerel is cooked in a tomato base (leaks, onion, tomato, ginger, garlic, olive oil and basil sea salt to taste)

Cooking is surprising easy if you don’t take it too seriously, it doesn’t need the same precision as with with baking etc- have fun in the kitchen, your freshly made food will taste better than any overly  process year old food in the store.
