Organic green eggs- In honor of Dr. Seuss

In honor of Dr. Seuss here is a little green for you, Happy Birthday. We love adding color to food without the use of any thing synthetic; we love playing with food naturally. This is our son’s favorite egg and we are very careful since he loves is spinach crisp, he won’t eat it wilted..

 

2 organic pasture eggs
1 Cup fresh organic baby spinach
A pinch of real sea salt and fresh ground black pepper to taste
2 tablespoon butter or your oil of choice
½ teaspoon water (pls don’t ask, my mom always added water to her eggs and I now do the same, really don’t know if it is relevant or not)

Whisk the eggs in a bowl with the spinach, salt,  pepper and water, heat butter in a large sauté or omelet pan add egg and cook on medium heat, allow to cook on one side then turn like you would your pancakes.. Enjoy
